Abstract:
PURPOSE: To provide a method for manufacturing translucent water gel containing thixotropic non-particulate denatured protein as well as foods and cosmetics containing the gel.
CONSTITUTION: The gel can be produced by preparing an aqueous liquid of water soluble protein of a concentration which is higher than the critical gel concentration in terms of protein and heating the liquid at a temp. between 60 and 150°C under shearing of at least 1000 s-1.
