To provide a stable syrup containing high trehalose concentration, which is hardly crystallized or non-crystallized at room temperature and is hardly contaminated with microorganisms, and to provide application of the syrup.
The α,α-trehalose-containing syrup of 25-35 w/w% water content including dissolved α,α-trehalose in an amount exceeding the solubility of the α,α-trehalose per water content at room temperature, at a temperature corresponding to the solubility, comprises dissolved α,α-trehalose in an amount of 18.5 to 25.0 w/w% per the syrup, and other saccharides which are dissolved and contained in an amount larger than the amount of the trehalose. Food and drink containing the syrup and a method for producing the syrup are also provided.
