Abstract:
To establish trehalose-releasing enzyme to produce trehalose from reducing partial starch hydrolysates, method for producing the same, and use thereof.
This invention comprises new trehalose-releasing enzyme, the production methods thereof, and a microorganism to produce the same; trehalose and trehalose-containing carbohydrate obtained from reducing partial starch hydrolysates using trehalose-releasing enzyme and non-releasing saccharide-forming enzyme; and trehalose-containing composition.
