PURPOSE: To simply obtain slice products of different thickness and shape by dividing the sliding surface in front of a knife into a fixed part nearby the front end and an exchangeable part nearby a knife, and setting the sliding surface of the exchangeable part to be a slope toward the lower part of the knife from the common end part with the fixed part.

CONSTITUTION: The sliding surface in front of a knife 1 is constituted of three parts, i.e., a fixed part 2 nearby the right end and integrally formed with a cutter part A, a fixed part 3 similarly nearby the left end and integrally formed with the cutter part A to hold the knife 1, and an exchangeable part 4 of parallelogram positioned between the knife 1 and the fixed part 2 and the common end 5 with the fixed part 2 being in parallel with the knife 1. The sliding surface of the exchangeable part 4 becomes downward gradient from the common end part 5 toward the end part 6 on the lower part of the knife 1, and a slitting port is formed between the knife edge 7 ant it. Thickness of slice products obtained from cooked material such as vegetables or fruit is decided by the vertical opening width of the slitting port.
