Abstract:

To provide a chemically modified starch for controlling and/or regulating a blood glucose level of mammal and absorption after meal and to provide a method for producing the modified starch.

The modified starch is modified by process(es) selected from a group consisting of modification with propylene oxide, modification with octenylsuccinic acid anhydride, acetylation, dextrinization and combination thereof and the modified starch attains a glucose release level of <25% after passage of 20 min, 30-70% after passage of 120 min or >60% after passage of 240 min. The modified starch is used for giving glucose over a long period to mammal which ate a food in which the modified starch is adequately formulated and giving constant glucose level to the mammal.
