Abstract:
PROBLEM TO BE SOLVED: To provide vegetable glycogen easily soluble in cold water and hot water as viscous polymers existent in rice and production thereof.
SOLUTION: Concerning the vegetable glycogen, which is easily soluble in cold water and hot water and shows viscosity in a hydrolytic rate from 25 to 200%, mainly composed of glucose polymers as polysaccharide made from rice and containing a large molecule group having weight average molecular weight from 5 millions to 76 millions and a small molecule group having weight average molecular weight from 30 thousands to 1 million and 100 thousands, after fine powder state rice is soaked in water or any solvent containing water, a liquid layer is provided by removing coagulated substances and protein caused by heating from extracted liquid provided by solid-liquid separation. This is injected into an organic solvent and purified as needed while removing generated nebula.
