To obtain a water-based pasty composition, which is of low calorie and palatable, or causing no sticky sensation and feeling pleasant to the touch by including dietary fibers whose size is reduced to some extent.
This water-based pasty composition contains 5 to 40wt.% of spherical or fibrous dietary fibers, each 5μm or less in diameter or length, respectively. The dietary fiber is of cellulose, hemicellulose, regenerated cellulose, soybean cake, tofu refuse, used tea leaves, citrus rind or the like, grain bran, soybean skin, or the like. The dietary fiber for the water-based pasty composition may be 80μm or less in particle size and contained in the composition to 5 to 40wt.% in the form of hydrogel. The hydrogel of the dietary fiber includes konjak, agar, pectin -Ca or -Mg, Ca or Mg alginate gel, or the like.
