To provide a healthy yogurt of bean curd including soybean milk, usable habitually and readily by persons always making an effort for healthy beauty or development of physical strength, growing persons in the growth phase, and persons having a sense of resistance to taste, flavor and eating of yogurt of only a dairy product, which has a high nutritive value, and is enjoyable together with texture, taste, and flavor.
The yogurt of the bean curd is obtained by mixing 208 g of soybean milk, 205 g of cow's milk, 398 g of yogurt, 100 g of fresh cream, 70 g of granulated sugar, 9 g of an oligosaccharide, 5 g of powdered gelatin, 3 g of vanilla essence, and 2 g of a thickener L in 1,000 g of the total soybean milk of whole soybeans (produced in Japan, without using transgenic soybeans), preparing a mixed liquid, heating the mixed liquid on a water bath, dissolving the whole, then filling the resultant solution, and carrying out cooling. The yogurt of the bean curd is healthy, and has high nutritive values of whey protein, soybean protein, isoflavone etc., as well as texture, taste, and flavor.
