Abstract:
To provide frozen noodles and a method for producing the same capable of being thawed by water of normal temperature and providing noodles having a preferable texture.SOLUTION: The frozen noodles are obtained by boiling dried noodles containing water-insoluble cellulose and then freezing them; the dried noodles include wheat flour as a principal component, and 0.5 mass% or more and 10 mass% or less of the water-insoluble cellulose based on the wheat flour is blended; the dried noodles are preferably manually extended; the method for producing the frozen noodles include a mixing step of mixing a noodle raw material containing 0.5 mass% or more and 10 mass% or less of the water-insoluble cellulose to obtain noodle dough, a noodle-making step of producing dried noodles with the noodle dough, a cooking step of boiling the dried noodles to obtain boiled noodles, and a freezing step of rapidly freezing the boiled noodles.SELECTED DRAWING: Figure 1
