Abstract:
To provide powder creamer having excellent solubility to cold water and excellent favor not only just after production but also after long term storage and to provide a producing method of the powder creamer.SOLUTION: In powder creamer, particles are coated with mixtures, the particles contain sugar, proteins and oil and fat. The mixture contains medium chain triglyceride and diglycerol fatty acid ester. A producing method of powder creamer comprises steps of: spray-drying emulsion containing sugar, proteins and oil and fat to obtain the particles: and coating the particles with the mixtures containing medium chain triglyceride and diglycerol fatty acid ester.SELECTED DRAWING: None
