Abstract:
PROBLEM TO BE SOLVED: To provide a structured soybean protein material that has a good flavor and that has a strong meat-like eat texture.SOLUTION: We have obtained a structured soybean protein material having an increased meat-like eat texture than before and having a good flavor, by blending oat fibers; especially, by the use of an oat fiber having a long fiber length, the meat-like eat texture became more pronounced; and also, by the combined use of a divalent metal salt, the meat-like eat texture became more preferable.SELECTED DRAWING: None
