Abstract:
The present invention addresses the problem of providing an acetic acid bacteria-containing composition for which the acetic acid-bacterial odor is reduced, and providing an acetic acid bacteria-containing composition that can adjust the flavor and/or texture of foods. This problem is solved by an acetic acid bacteria-containing composition that contains nonanal and methylheptenone and that exhibits a peak area ratio between nonanal and methylheptenone (nonanal:methylheptenone), as measured using stir bar sorptive extraction-thermal desorption-gas chromatography/mass spectroscopy (SBSE-GC/MS), of 1:10 to 100:1.
