Abstract:
A process for producing bifidobacterium-fermented milk by mix-culturing $i(Bifidobacterium breve) with $i(Lactococcus lactis sp. lactis) which forms neither diacetyl nor acetoin; the bifidobacterium-fermented milk thus obtained; and $i(Lactococcus lactis sp. lactis) strain YIT2027 (FERM BP-6224). By the above process, an extremely large viable count of the bifidobacterium can be achieved without resort to any growth promoter and the survival of the bifidobacterium can be highly improved during the storage of the fermented milk. Because of being free from diacetyl or acetoin, the obtained fermented milk has a good flavor.
