Abstract:
The present invention relates to bread containing a bamboo leaf extract, and to a method for manufacturing same. Bamboo leaves, which are widely used as herbal medicines due to excellent moisturizing ability and medicinal effects thereof, are pulverized into powder, the powder is added to and boiled in water so as to obtain a final liquid extract, and then the extract is used as an undiluted solution for kneading bread ingredients including flour, and thus, the extract enhances the moisturizing effect for bread. In addition, a liquid starter is prepared by using bamboo leaves, the bamboo leaf liquid starter is mixed and fermented with flour and water so as to prepare a mother dough, and then the mother dough is added to and used in a dough, and thus, the bamboo leaf mother dough promotes, together with yeast, the fermentation of the dough and can make sticky and delicious bread.
