Abstract:

The present invention addresses the problem of developing new fermentation technology using fermentation by ascomycetous white wood-rotting fungi having mycorrhizal characteristics. In the present invention, vital active substance-containing fermented food products are manufactured using production of a vital active substance by raw material fermentation by ascomycetous white wood-rotting fungi having mycorrhizal characteristics, a residual agrochemical in a food raw material is decomposed using decomposition of a hardly decomposable compound, and a contained component is extracted at a high speed using weakening of cell membranes of a plant.
