Abstract:
[PROBLEMS] To produce a useful food material from fish bone that is a residue of the fish processing industry. [MEANS FOR SOLVING PROBLEMS] A fish bone paste, which is composed of finely ground grains being soft per se, has an appropriate viscosity owing to collagen decomposition products and contains all of the components originating in fish bone in a highly digestible and absorbable state, is produced by starting with fish bone from which skin, meat, etc. have been removed, heating the fish bone under elevated pressure to decompose collagen constituting the bone, and then finely grinding the fish bone containing all of the components as such. As the starting material, it is preferable to use pollack bone having a small fat content. In the case of using fat-rich fish bone, it is preferable to perform a defatting treatment. A composition comprising this fish bone paste is suitable for preventing and treating osteoporosis.
