Abstract:
Disclosed are: a flavor improver; and a condiment, food or beverage using the flavor
improver, particularly a flavor improver for a spice-containing food or beverage.
Poly-γ-glutamic acid or a salt thereof is added to a food or beverage, thereby
improving the spiciness, preventing the deterioration in flavor and keeping
a well-balanced flavor in the food or beverage.
