Abstract:
Disclosed is a foamable oil-in-water emulsion having improved milk flavor when whipped without increasing the production cost or adding special equipment. Specifically disclosed is a foamable oil-in-water emulsion comprising 15 to 49% by weight of oil and fat components, 2 to 15% by weight of non-fat milk solid components, and water, wherein the particle size distribution of the emulsion of oil droplets dispersed in an aqueous phase satisfies the formulae: relative span factor (R.S.F) = (D90-D10)/D50 ≥ 1.6, and 2 ≥ D50 ≥ 1 (wherein D90 and D10 represent a diameter at a 90% cumulative volume and a diameter at a 10% cumulative volume, respectively, counted from the smallest particle in the cumulative particle size distribution, and D50 represents a median diameter).
