Abstract:
[Problem] The present invention addresses the problem of providing: heat-sterilized chilled Chinese noodles for which texture deterioration is suppressed even during long-term chilled storage at a temperature of 10°C or lower; and a method for producing the same. [Solution] The problem is solved by adding an α-glucosyltransferase to heat-sterilized chilled Chinese noodles. The α-glucosyltransferase is preferably heat resistant, and is preferably added in an amount of 240-2400U relative to 1 kg of main raw material powder. During chilled storage, texture deterioration can be suppressed.
