Abstract:
The present invention relates to the technical field of structure grease. Disclosed are a lipid soluble caffeic acid fatty acid structure grease, a preparation method therefor, and application thereof. The chemical name of the lipid soluble caffeic acid fatty acid structure grease of the present invention is monocaffeoyl monooleoyl glyceride, more specifically, monocaffeoyl monooleoyl diacylglycerol. The structure is shown as follows: formula (I) and formula (II). R = linoleoyl, octadecatrienoyl, or palmitoleoyl. According to the present invention, non-solvent systems are used twice to promote the exchange reaction of ethyl caffeate and glyceride to prepare 1-monocaffeoyl glyceride, then conducting exchange reaction with fatty acid to prepare corresponding diglyceride to achieve the preparation of a lipid soluble caffeic acid derivative. Three novel phenololipoids are acquired as functional greases. The novel phenololipoids have multiple biological activity of caffeic acid, have strong anti-oxidant activity in water soluble or alcohol soluble systems and overcomes the shortcoming of bad lipid solubility of caffeic acid. Also, the grease can be used as anti-oxidant in the fields of food (especially greasy products), cosmetics, and the like, and has great economic and social value.
