Abstract:
The purpose of the present invention is to provide: a composition which can be widely used, can be easily produced, and can impart a meat flavor without containing a meat material; and a method for producing the composition. In particular, provided are: a method for producing a meat flavor imparting agent, the method comprising heating coarse sugar and cysteine or a salt thereof; and a meat flavor imparting agent containing a product obtained by heating crude sugar and cysteine or a salt thereof.
