Abstract:
The present invention provides a method for producing Nε-dodecanoyl-L-lysine, said method using an enzyme that performs appropriately for the industrial production of Nε-dodecanoyl-L-lysine. Specifically, the present invention provides a method for producing Nε-acyl-L-lysine wherein Nε-acyl-L-lysine is generated by reacting a carboxylic acid or a salt thereof and L-lysine or a salt thereof in the presence of one of the following proteins (A)-(C): (A) a protein that includes an amino acid sequence of SEQ ID NO: 1; (B) a protein that has an Nε-acyl-L-lysine-specific aminoacylase activity and includes an amino acid sequence in which one or a plurality of amino acid residues is/are inserted, added, deleted, or replaced in the amino acid sequence of SEQ ID NO: 1; or (C) a protein that has an Nε-acyl-L-lysine-specific aminoacylase activity and includes an amino acid sequence that demonstrates 90% or more homology with the amino acid sequence of SEQ ID NO: 1.
