Abstract:
[Problem] To provide a ground-onion-containing liquid having the exceptional fresh flavor, sweetness, and cooking feel of onions. [Solution] The present invention is a method for producing a ground-onion-containing liquid at a temperature lower than 100°C, the method being characterized by including: a grinding step for grinding onions in the presence of an edible oil and fat or mixing the onions with the edible oil and fat immediately after grinding to obtain an onion mixture, the pH of the onion mixture being 4.15-6.80 inclusive, and the edible oil and fat content of the onion mixture being 0.10 parts by mass or greater per 1 part by mass of the onions; and a preparation step for adding an acidic material to the onion mixture obtained in the grinding step to obtain a ground-onion-containing liquid, the pH of the ground-onion-containing liquid being 3.80 or lower.
