Abstract:
A production method for accurately controlling the molecular weight and esterification degree of small molecular pectin by an enzyme-alkali combination method. The method comprises: first cracking the molecular weight of pectin to a target molecular weight by using a pectate lyase, adding an alkaline solution for adjusting a pH value to 8-12, so as to reduce the esterification degree of small molecular pectin to a target esterification degree, adding acid after de-esterification, and carrying out neutralizing, clarifying, filtering, alcohol precipitation, washing, drying and crushing to obtain small molecular pectin. The small molecular pectin can be used as raw materials of foods, health-care products, special medical formulated foods, medicines, etc.
