Abstract:
Discloses is a method for producing a capsinoid-containing beverage/food in a stable manner. Also disclosed is a capsinoid-containing emulsion composition which has improved dilution stability and is intended to be used in the method. The method comprises mixing an oil phase containing a capsinoid compound, an aqueous phase and an emulsifying agent with one another to prepare an emulsion composition, and mixing the emulsion composition with an aqueous dilution component to prepare the beverage/food, wherein an emulsifying agent and/or a polymeric component is further added to the emulsion composition, the aqueous dilution component or a mixture of the both.
