Provided is a method for treating oil- and fat-containing wastewater treatment method wherein wastewater in which a wide variety of microorganisms are present flows in and out continuously, and the concentration of oils and fats in the wastewater is effectively reduced using a preparation of microorganisms having the capacity to breakdown fats and oils. Also provided are a related system and apparatus. This invention provides: a method for the treatment of oil- and fat-containing wastewater, containing a step in which a microorganism preparation having the capacity to break down fats and oils is continuously or intermittently fed into an oil and fat breakdown tank through which oil- and fat-containing wastewater is fed continuously, thereby breaking down the fats and oils, the quantity of the microorganism preparation which is introduced being a quantity which enables the microorganisms to adhere to the oil and fat breakdown tank, and microorganisms other than the microorganisms contained in the microorganism preparation being present in the oil- and fat- containing wastewater; and a related system and apparatus.
