Abstract:
Provided is a multifunctional apparatus for cold processing of organic materials by which the surface and core of a material to be treated are simultaneously processed at a low temperature in water having a high low-temperature conductivity with the use of ultrasonic waves and cavitation energy that are generated by the spontaneous rupture in the water of oxygen-free microbubbles of a low-temperature inert gas.
The difference in freezing time between the surface and core of a material to be treated is minimized with the use of cavitation energy (20) caused by the rupture of oxygen-free microbubbles (14) in low-temperature water having a high heat conductivity. Thus, food materials, foods, biological tissues, vital cells and so on can be prevented from denaturation and damages and kept fresh.
