Provided are: a polyester resin having a self-emulsifying function which can form an aqueous emulsion without using an emulsifier and an organic solvent; a laminate and a packaging material formed by a water dispersion containing the polyester resin, an aqueous adhesive, and an aqueous ink; and a method for preparing a water dispersion. This polyester resin is represented by a chemical structure of formula (1), and has an acid value of 250-2,500 eq/106g and a number average molecular weight of 2,000-50,000: (X-O)r-W-(O-(CO-Z-CO-O-Y-O)p-X)q ···(1) where W is a (q+r)-valent organic group, (CO-Z-CO-O-Y-O) is a polyester resin skeleton having a polymerization component of a polyvalent carboxylic acid component Z and a polyhydric alcohol component Y, and X is the residue of a polybasic acid having two or more carboxyl groups or hydrogen (however, all of (q+r) X's are not hydrogen). X, Y, and Z may be the same as or different from each other, and also the same as or different from each other in the same repeating unit. The average value of p is 3 or larger, the average value of q is 0-15 (exclusive of 0), the average value of r is 0-15 (exclusive of 15), and (q+r) is 3-15 inclusive.
