Abstract:
Provided are: a composition which contains a polyglyceryl monofatty acid ester that is a compound having excellent surface-activating performance, is highly safe, and can be used as an emulsifying agent to be added to foods, cosmetics, drugs or quasi drugs; and a method for producing the composition. A polyglyceryl monofatty acid ester composition according to the present invention is characterized in that the content of monoesters each represented by formula (1): RCO-[Gly] is 70% or more, the content of diglycerin residues, triglycerin residues and tetraglycerin residues is 70 wt% or more relative to the total amount (100 wt%) of the [Gly] residues that constitute all of the monoesters contained in the composition, the content of polyglycerin residues each having a glycerin polymerization degree of 7 or more is 10 wt% or less relative to the total amount (100 wt%) of the above-mentioned [Gly] residues, the content of chlorine atoms is 10 ppm or less, and the content of metal elements is 1 ppm or less.
