Abstract:
A process for producing fats and oils having enhanced contents of cis-monounsaturated fatty acid groups, which comprises subjecting a starting fat or oil that contains polyunsaturated fatty acid groups to hydrogenation using a hydrogenation catalyst that contains at least one element selected from among Groups 11 elements of the periodic table.
