Abstract:
The present invention pertains to: a protein comprising a given specific insertion sequence and exhibiting glucose-mannose epimerization activity, and a method for producing mannose using said protein; a protein comprising a given specific insertion sequence and exhibiting galactose-talose epimerization activity, and a method for producing talose using said protein; production methods for the proteins; and an enzyme preparation containing the proteins. The present invention provides a method by which it is possible to respectively produce mannose and talose efficiently, and an enzyme or enzyme preparation which can be used in the method.
