Abstract:
Provided is a ripening inhibitor capable of inhibiting ripening of fruits and vegetables, by using inexpensive materials. This ripening inhibitor for fruits and vegetables contains: a dried product of tomato leaves; and a dried product of dehydration sludge obtained by dehydrating water purification sludge or sludge accumulated in a river or lake, drying the dehydrated sludge at 150-200°C for 30 minutes, naturally cooling the dried sludge for 24 hours such that the moisture content of the sludge becomes 5% or lower, and pulverizing the cooled sludge.
