A sheet splitting apparatus and a method of a liquid crystal panel. The sheet splitting apparatus comprises an upper split sheet (10), a lower split sheet (20), a first clamping mechanism (30), and a second clamping mechanism (40). The upper split sheet (10) and the lower split sheet (20) clamp an edge cutting area of the liquid crystal panel. The first clamping mechanism (30) clamps two end portions of the upper split sheet (10) and the lower split sheet (20). The second clamping mechanism (40) clamps middle parts of the upper split sheet (10) and the lower split sheet (20). By adjusting the second clamping mechanism (40), the middle parts of the upper split sheet (10) and the lower split sheet (20) are closely pasted to the liquid crystal panel and cannot curve, and the error of distances of parts of the upper split sheet (10) and the lower split sheet (20) is ensured to be below 0.05mm, so that the sheet splitting is normal, thereby improving the yield of the liquid crystal panel.
