Abstract:
Provided is a solid food product composition, such as a food bar or the like, containing insoluble dietary fiber, wherein dispersion of powder or ingredients when the composition is broken to a suitable size for eating, is chewed, etc., during consumption is suppressed. The present invention is a solid food product composition containing insoluble dietary fiber, the composition satisfying the following conditions (1) through (7). (1) Contains an edible and/or inedible portion of at least one type of ingredient containing insoluble dietary fiber, the content of said ingredient being 5 mass% to 95 mass%, inclusive, in terms of total dry mass. (2) The insoluble dietary fiber content is at least 1 mass%. (3) Sugar content is 10 mass% to 75 mass%, inclusive. (4) Water content is 20 mass% or less. (5) The 50% cumulative particle size after ultrasonication is greater than 15 μm and no more than 500 μm. (6) The 90% cumulative particle size after ultrasonication is 50 μm to 1,000 μm, inclusive. (7) The minimum particle size after ultrasonication is 4 μm or less.
