Abstract:
[Problem] To provide a thickener of non-animal (plant) origin that can impart an excellent texture similar to hydrous substances to which gelatin has been added. To further provide a viscous substance that has an excellent texture similar to gelatin, and also has good thermal stability without losing a thickening effect thereof even after undergoing heating.
[Solution] Added is a thickener including (A) locust bean gum and (B) carrageenan as essential components, and having a mixing ratio of component (A) and component (B) where, in terms of mass ratio, the proportion of component (B) is in the range of 1.0 to 4.0 when the proportion of component (A) is 10.
