Abstract:
Provided is an unfermented beer-taste beverage which has an appearance with a beer-like head but is free from the fermentation smell characteristic to both beers and non-alcoholic beer-taste beverages. An unfermented beer-taste beverage containing soybean dietary fiber, which is free from the fermentation smell that is characteristic to both common beers and non-alcoholic beer-taste beverages and can form a beer-like head having a fine texture and good appearance when poured into a glass or the like. The bubbles of the unfermented beer-taste beverage, said bubbles linearly rising up in a glass, are micro bubbles similar to champagne bubbles. Owing to the beer-like head, the unfermented beer-taste beverage is smooth on the lips and, furthermore, soft and gentle on the throat.
