A water-based shellac coating material containing shellac and a basic amino acid and/or basic phosphoric acid salt and a process for producing the coating material; a food and medicine coated with the coating material; a liquid glazing composition for oily snacks which comprises an aqueous shellac solution (A) comprising water and, dissolved therein, shellac and a basic amino acid and/or basic phosphoric acid salt and a thickener (B) and/or sugar (C); a method of glazing an oily snack which comprises applying the glazing composition to the oily snack to glaze it; and a glazed oily snack which can be produced by the glazing method for oily snacks.
