Abstract:
To provide a method of producing 5-hydroxy-equol using microorganisms with the ability to produce 5-hydroxy-equol from genistein.SOLUTION: The method of producing 5-hydroxy-equol comprises the following step (a). Step (a): a step in which a microorganism belonging to the genus Asaccharobacter and/or a microorganism belonging to the genus Adlercreutzia having the ability to produce 5-hydroxy-equol from genistein is made to produce 5-hydroxy-equol from genistein in a solution comprising genistein.SELECTED DRAWING: None
