Abstract:
To provide a production method of a seasoning that gives a rich Japanese-style cooking taste of Japanese-style seasonings such as soy sauce and sweet rice wine.SOLUTION: A production method of a seasoning includes a step for heating a mixture of a hydrolysate of an eggshell membrane and monosaccharide. The monosaccharide is one kind or two kinds or more selected from xylose, fructose, and glucose. An aqueous solution dissolving the seasoning of 10% in terms of a solid content has an absorbance (Abs) of 0.30-2.0 Abs at 400 nm.SELECTED DRAWING: None
