Abstract:
To provide a process for producing a pre-cooked chilled pasta that shows little deterioration in the eat-texture after boiling.SOLUTION: Provided is a process for producing pre-cooked chilled pasta by boiling pasta to an edible state, followed by subjecting to heat treatment with superheated steam at a temperature of 150 to 350°C for 15 to 60 seconds or with superheated steam at a temperature of 160 to 180°C for more than 60 to 270 seconds before cooling the pasta.EFFECT: Especially when eating, it is effective for improving eat-texture of the pre-cooked chilled pasta that is heated by range up.SELECTED DRAWING: None
