Abstract:
To provide methods for producing a saccharide composition capable of efficiently removing saccharides (monosaccharide and disaccharide) without generating by-products.SOLUTION: The present invention uses a sugar composition containing monosaccharide, disaccharide, and trisaccharide or more as a raw material, and comprises performing the following steps sequentially or simultaneously: (A) causing a sugar hydrolase that does not substantially hydrolyze a sugar of a trisaccharide or more to act on the sugar composition to hydrolyze a disaccharide in the sugar composition raw material into a monosaccharide; and (B) causing a sugar oxidase to act on the monosaccharide in the sugar composition to convert the monosaccharide into a sugar acid, and then performing the step (C) removing the sugar acid from the sugar composition to obtain a sugar composition in which the content of monosaccharide and disaccharide in the sugar composition is reduced.SELECTED DRAWING: None
