Abstract:
To provide powdered miso having enhanced hygroscopic resistance, a manufacturing method of the powdered miso, and a hygroscopic resistance enhancement method of the powdered miso.SOLUTION: The powdered miso has content of glutamic acid of 500 to 3000 mg/100 g, and XRD peak intensity ratio at each diffraction angles satisfying a prescribed condition when diffraction peak intensity at diffraction angle of 2θ=31.7°±0.5° is 100. The powdered miso is preferably a freeze-dry powder. The manufacturing method of the powdered miso includes an addition process for adding the glutamic acid to the miso so that content of the glutamic acid is 500 to 3000 mg/100 g, and a drying process for conducting a drying treatment on a raw material after the addition process.SELECTED DRAWING: Figure 5C
