Abstract:
To provide a novel technology capable of providing more feeling of green flavor and expansion of flavor during drinking, while suppressing growth of microorganisms in a green tea beverage.SOLUTION: There is provided a manufacturing method of a green tea beverage including a heat treatment for heating a green tea extract at 70 to 110°C for 30 sec. or less, and supplying the green tea extract to a filtration treatment by using a filter with pore diameter of 0.22 μm or less before or after the heat treatment. It is preferable to heat the green tea extract so that at least one of relationships represented by following (a) and (b), wherein heating temperature is X (°C) and heating time is Y (sec.) in the heat treatment.
