Abstract:
To provide a manufacturing method of sheet-like protein-containing food products with a method similar with sheet-like protein-containing food products such as skin of normal crepe, where wheat, egg and milk raw material may be substituted with a large ratio, or without using wheat, egg, and milk raw material.SOLUTION: A manufacturing method of a sheet-like protein-containing food products having high replacement ratio of wheat, egg, and raw material milk, in which 2.5 mass% or higher of edible fiber content, 25 mass% or higher of protein content per dry matter, 25 mass% or higher of lipid content per dry matter (a content as a chloroform/methanol mixed solvent extract), 70 to 90 mass% of water, and edible fiber-containing soy bean emulsion composition in which a lipid content is 100 mass% or higher relative to a protein content are blended.SELECTED DRAWING: None
