Abstract:
To provide a grain flour composition for making noodles that can efficiently produce quick-to-boil noodles, noodles including the same, and a method for making the same.SOLUTION: A grain flour composition for making noodles contains wheat flour and pregelatinized starch with the protein content of 4.5 mass% or more. In the grain flour composition for making noodles, pregelatinized starch with a solution viscosity (RVA viscosity) of 50 mPa s or more makes up 4-35 mass% of the whole grain flour composition. There are also provided noodles that are made from the grain flour composition, and a noodle making method that includes making noodles from the grain flour composition.SELECTED DRAWING: None
