Abstract:
PROBLEM TO BE SOLVED: To provide a 1,5-anhydroglucitol dehydrogenase highly specific to 1,5-anhydroglucitol (1,5-AG). SOLUTION: This (1,5-AG) dehydrogenase has the following physicochemical properties: (1) having the optimum pH around pH 9; (2) having stability in the range of pH 6-10; (3) having the optimum temperature at 40-45 deg.C; (4) having >=50% remaining activity after incubation at 70 deg.C for 10 min; (5) capable of utilizing an oxidized nicotinamide adenine dinucleotide; (6) not recognizing glucose as a substrate.
