Abstract:
To produce plum spirits obtained by fermenting plum itself.
The method for producing the plum spirits comprises: (1) a first step for preparing a primary unrefined sake from a primary raw material containing water, malted rice and yeast; (2) a second step for preparing a secondary unrefined sake by blending a secondary raw material containing grains or their starches with the primary unrefined sake; (3) a third step for preparing a tertiary unrefined sake by blending the second unrefined sake having <15 wt.% alcohol concentration with a third raw material containing plum and fermenting the plum in the secondary unrefined sake; and (4) a fourth step for distilling the tertiary unrefined sake.
