PROBLEM TO BE SOLVED: To provide a method for producing a lactic acid fermented tomato food that contains a high concentration of acetylcholine.SOLUTION: The present invention provides a method for producing a lactic acid fermented tomato food that contains acetylcholine, the method including the following steps of: (1) treating tomato with a high pressure of 100 MPa or more; (2) physically crushing the high-pressure treated tomato; and (3) fermenting the crushed tomato using lactic acid bacteria.SELECTED DRAWING: None
