Abstract:

PROBLEM TO BE SOLVED: To provide a fruit flavor alcohol beverage with suppressed sweetness having no addition of saccharides or sweetener, harmony with meal (cooking), and good taste as "alcohol beverage fitted to meal".SOLUTION: There is provided a fruit flavor alcohol beverage with suppressed sweetness, having no addition of saccharides or sweetener and having good taste with inhibited bitterness and unpleasant taste derived from alcohol and arranged taste by blending citral at citral concentration in the alcohol beverage of 3.0 to 10.0 ppm and 1,8-cineole at 1,8-cineole concentration in the alcohol beverage of 0.10 to 0.30 ppm as alcohol beverage component raw materials. There is provided a fruit flavor alcohol beverage with harmony with meal and refresh taste by dissolving problems of monotonous taste due to suppression of sweetness together with suppression of bitterness and unpleasant taste derived from alcohol by adopting the constitutional requirements.SELECTED DRAWING: None
