Abstract:
To provide a sterilization method for use with the proper stability of a gustatory sense which brings an ink of a cephalopod which should be preserved into a safe and sterilized state for a certain period, and after that, is used in cooking without causing health damage.SOLUTION: A sterilization method by heat treatment for preserving an ink of a coleoid cephalopod mollusk includes: a first heat treatment process 1 for homogenizing the ink in a reaction vessel, and performing low-temperature sterilization treatment for a 10 min or longer at a temperature of at least 70°C; a cooling process 2 for cooling the homogenized ink in a tank which is set at a temperature lower than 30°C; a process 3 for maintaining the ink in order to lower a temperature of the ink in the tank, and displaying a charge, rotation, blowing and an expiration date; and a second heat treatment process 4 which is performed in an automatic crave at a sterilization temperature of 110°C or higher up until a certain time fdepending on a canned quantity reaches 6 or longer.SELECTED DRAWING: None
